Botrytis wines are made by Hollick Wines in extremely small quantities, and only in vintage years when the 'Noble Rot' or Botrytis Cinerea appears naturally in the Hollick vineyards. The wines are rich and sweet, with dried apricot and honey overtones from the Botrytis infection, balanced with concentrated fruit characters and a clean acid finish. These wines should be served chilled with desserts and cheese, or as an apertif with game pate or terrine. Whilst drinking sensationally now, cellaring for 7 years or more will be rewarded. |
