Wilgha Shiraz

The Hollick Wilgha Shiraz is the result of painstaking attention to detail in the vineyard and winery, and the uncompromising standards set by the entire Hollick team.

The initial selection for this wine is made in the vineyard. The Wilgha vineyard is situated on the south-western corner of the famed Coonawarra terra rossa strip. The best Shiraz grown on the Hollick 'Wilgha' vineyard is put aside for this wine, generally it comes from the 1975 plantings, on a shallow patch of rich Terra Rossa soil.

The decision to harvest this Coonawarra Shiraz is based on assessment of flavour ripeness in the vineyard. Once harvested, each parcel is handled separately. Partial barrel fermentation and eighteen months maturation in 100% new French oak is employed to add structure and complexity to the wine. The resulting wine is deep crimson in colour, showing the typical spice and white pepper aroma and flavour of cool climate Shiraz.

Oak maturation contributes vanillin and faint caramel flavours, while contributing to the complexity, overall balance and drinkability of the wine. We recommend serving with red meats and cellaring for 7 to 10 years.
