Sparkling Chardonnay Pinot Noir

This limited release, cellar door exclusive wine is a blend of Pinot Noir and Chardonnay fruit, grown on the Hollick Coonawarra vineyards. The long, cool growing seasons that prevail in Coonawarra are ideal for growing grapes for Sparkling whites. Hollick made their first Sparkling White in 1988 and since that time the blend and style has changed from vintage to vintage. The 2009 vintage release saw a return to bottle fermentation and 6 months of lees contact to gain further sparkling complexities. Light straw in colour early in its life, it will develop golden hues with age. The flavours also develop from youthful fruit characters into a toasty, complex, sparkling wine. Further bottle age is recommended and the wine should be served chilled at the beginning or end of a meal, and is ideal with smoked salmon and cream cheese on blini or other hors d'oeuvres. |
