Orange Almond and Cardamom Cake with Roasted Oranges (114.36 kB)
Ingredients
For the cake
2 oranges
275g caster sugar
6 eggs
250g almond meal
1 teaspoon baking powder
1/2 teaspoon ground cardamom
For the roasted oranges
6 oranges
2 tablespoons orange zest
2 cinnamon sticks
1/3 cup honey
Pine nuts and double cream to serve

Method
- Preheat oven to 180 degrees Celsius. Grease a 20cm spring form cake tin and line with baking paper.
- Cover the oranges and boil in a covered saucepan for 2 hours. Drain and leave oranges to cool.
- When oranges are cool, cut into quarters and remove any seeds. Place the oranges and all remaining ingredients into a food processor. Blend thoroughly until smooth.
- Pour into prepared tin and bake for approximately 1 hour.
- For the roasted oranges, zest the oranges, then remove all pith and thickly slice the oranges.
- Lay the oranges in a baking dish. Scatter over the orange zest and cinnamon sticks and then drizzle with the honey.
- Bake in a moderate oven for about 1 hour until the oranges are golden and caramelised. Serve with a slice of the orange cake, a scattering of pine nuts and some double cream.
