Sparkling Merlot
The variety Merlot lends itself ideally to wines of this style. Intense fruit flavours and soft structure carry through to the finished wine after secondary fermentation.
The base wine is fermented as usual for dry red wine, and matured in two year old French oak for twelve months prior to re-fermentation. The resultant wine is liquered to a predetermined sweetness upon final packaging, and is recommended for further bottle maturation.
It is a perfect party starter and is also an ideal accompaniment to scrambled eggs and smoked salmon for breakfast.
