Bond Road (Reserve) Chardonnay
Coonawarra has one of the longest growing seasons for Chardonnay in the world, allowing the fruit to develop and ripen slowly, with sufficient natural aciditiy for palate balance.
Clarified juice is fermented in new French oak hogsheads, where it remains on yeast lees for six months. This contributes nuttiness and palate complexity and softens the impact of the new oak.
The stainless steel-fermented portion retains the fresh melon and grapefruit flavours of the variety. A small portion of the wine is then encouraged to undergo malo-lactic fermentation, which adds softness to the mouth-feel and a slight buttery note to the nose and palate.
The resulting wine is complex and restrained, with a crisp acid finish, making it an ideal match for lobster and smoked salmon. Cellaring for up to 7 years is recommended.
