Cabernet Sauvignon Merlot
This wine is a classic Coonawarra style, showing bright crimson colour with rich berry and cassis aromas and flavours over soft tannins.
French and American oak maturation contributes to the wine's overall balance and drinkability. Cabernet Sauvignon is the major component of the blend, with 15% to 20% Merlot added for softness in the early years of the wine's life.
Representing almose one-third of Hollick production, its predecessors have won numerous awards at Australian Wine Shows including the Jimmy Watson, Robert Bryce and Arthur Kelman Trophies.
It is at its best when consumed with roast and grilled meat dishes or fine cheese. We recommend cellaring for 7 to 10 years.
