Wilgha Shiraz
 A selection of the best Shiraz grown on the Hollick 'Wilgha' vineyard is put aside for this wine. It expresses the distinctive characteristics of the variety, when grown in a cool region on rich Terra Rossa soil.
Fruit is picked at optimum ripeness, crushed and fermented in stainless steel and then matured for twelve months in new American oak hogsheads. The resulting wine is deep crimson in colour, showing the typical spice and white pepper aroma and flavour of cool climate Shiraz.
Oak maturation contributes vanillin and faint caramel flavours, while contributing to the complexity, overall balance and drinkability of the wine. We recommend serving with red meats and cellaring for 7 to 10 years.
