    Ian Hollick

    Founder, Director and Brand Ambassador

    Ian Hollick was born in Mildura Victoria, the son of a Soldier Settler Fruit Blocker. He studied Agricultural Science and immediately after this sought work as a Vineyard Manager in Coonawarra.

    After 13 years in the corporate wine business, he and Wendy Hollick, developed Hollick Wines on a 40-acre title which had been one of the original John Riddoch selections in Coonawarra. Having been the driving force in the Hollick business for nearly forty years, Ian is now enjoying some well-earned leisure time, travelling and managing to play more golf.

    While the majority of Hollick was purchased by investors in 2014 Ian remains a significant shareholder, a Director on the Board and still spends a considerable time promoting the Hollick brand and its wines both in Australia and around the world.

    Joe Cory

    Winemaker

    Born and bred in the Limestone coast Joe went to university in Adelaide to become an accountant and came back a winemaker. After stints in Barossa, Coonawarra and California the call of home saw him come back to the Limestone Coast Wine Zone, working at Wynn’s (Coonawarra) and Cape Jaffa (Mount Benson).

    In 2010 Joe joined the Hollick team as assistant winemaker, developing his understanding and skills in the making of Coonawarra wines. Leaving late in 2012 to step up to a Winemaker role, he returned one year later to take over the Winemaker position at Hollick.

    Embracing the outdoor life, Joe revels in the fact that all his favourite pastimes are just out of his front door. Dividing his time between fishing, hunting, camping, motorcycling and most recently learning to fly, Joe thinks he may have just struck the perfect life/work balance.

    Vineyard Manager

    Local boy Stuey developed a passion for viticulture early in life whilst working down the road at Rymill in his school holidays. After gaining valuable experience at Redman & Zema Estate, Stuey joined the Hollick Team in 2001.

    In his spare time, Stuey pursues his quest to breed the perfect Jack Russell pup and enjoys a spot of fishing. He also boasts an impressive trophy collection which includes the Limestone Coast Wine Show 2004 Arthur Hoffman Trophy for Viticulturist of Best Wine, and the 2014 & 2015 winner & runner-up trophies for the Hamilton Jack Russell Dog Show.

    Christian Fraser

    General Manager

    With 20 years’ experience in the wine industry ranging from retail, vineyard and restaurant management, winemaking and administration in both Western Australia and the Limestone Coast regions, Christian Fraser is embracing his role at Hollick. When not managing the day to day activities on site, Christian can be seen driving a firetruck for the Country Fire Service.

    A well-loved identity in Coonawarra, Marion will always greet you with a smile, and remember who you are on your next visit to our Cellar Door – even if it’s not for another five years! Maz’s sausage rolls are legendary morning tea fodder for the Hollick team and her wine knowledge and the useful information she imparts to visitors the Cellar Door of all things both Hollick and local are invaluable.

    Hannah Lewis

    Restaurant Manager

    Hannah grew up in the Limestone Coast region, working in the local cafes and pubs from a young age. Having now been in the industry for 11 years, she has developed a passion for food and the joy it creates. When she isn’t Upstairs, you can find her playing with her two young children Ruby and Blake or enjoying a nice bottle of wine.
